How to cook with millet, and make it a savory tex-mex hit. This millet seed grain dish is packed with wonderful smoky and spicy flavors. Millet is an economical high-protein seed grain to spotlight on your menu. Enjoy! • Tex-Mex Millet • Recipe recap: • 1 cup Hulled Millet • 1 cup canned Black Beans, drained • 1 cup Frozen Corn, defrosted • 2 Medium Tomatoes, diced • 1 Bell Pepper, seeded and diced • 1 cup Sliced Scallions • 2 Limes • Olive Oil • 1 tablespoon Ancho Chili Powder • 1 teaspoon Ground Cumin • 1 teaspoon Smoked Chipotle Chili powder, or to taste • Salt and Pepper • In a medium saucepan, add millet with a dash of oil and salt and toast over medium heat until fragrant, 3-4 minutes. Add 2 cups of water, bring to boil then reduce to simmer until water is absorbed. Cover and remove from heat, let stand 5 minutes then fluff with a fork. • Meantime in a large skillet, sauté all vegetables except tomatoes in 2 Tbsp of olive oil. Once softened, add an additional 1-2 Tbsp oil with the spices, salt and pepper. Toss to combine. Stir in prepared millet and tomatoes. Squeeze over the juice of 1-2 limes.
