Aussie, Aussie, Aussie! Oi, Oi, Lamingtons!?? • It doesn’t quite have the same ring to it. Nevertheless, this lamingtons recipe has to be the best I have baked yet. • The soft, light and delicate sponge absorbs the chocolate icing and then it is dipped into coconut. In Australia we SURE know how to make tasty TREATS. • If you did want to be a little bit FANCY, cut the lamington in half, pop a dollop of jam and cream in the middle and sandwich them back together. Either way, Lamingtons are delicious and a staple on Australia Day. AND any other day really! Like all cakes I suggest serving them for breakfast, lunch and dinner and any other time eating is taking place. • As we say here in Australia “our land is girt by sea and our lamingtons girt by chocolate and coconut”.
