My Nectarine and Burrata salad tastes as good as it looks—amazing! This salad pairs juicy nectarines with creamy burrata cheese for an incredible end of summer combination. Finish with fresh basil, a drizzle of olive oil and a few seasonings, and you will have an easy and fabulous restaurant quality salad that everyone will love! • For more information about Tavolo Pazzo Olive Oil visit: http://www.tavolopazzo.com • Nectarine and Burrata Salad • 2-3 ripe nectarines (you can substitute any stone fruit—peaches, plums, apricots...) • Burrata cheese (you can substitute fresh mozzarella cheese as it can be less expensive and easier to find!) • 5-6 leaves fresh basil • Kosher salt • Black pepper • Crushed red pepper flakes • Extra virgin olive oil • Slice the nectarines into wedges. Arrange on a platter. Top with pieces of burrata cheese. Tear the fresh basil and scatter over top. Drizzle with extra virgin olive oil. Season with kosher salt, fresh ground black pepper, pinch of red pepper flakes. Serve at room temperature.
