Start by taking some sooji (semolina) and oats. Grind the oats into a fine powder and mix it with the sooji and some curd. Blend well and set this mixture aside. • Prepare beetroot juice, making sure to keep the pulp in the juice. Add this beetroot juice to the sooji-oats-curd mixture and let it rest for a while. • In a tadka pan, heat some oil and add mustard seeds and curry leaves. Let them temper and then add this to the batter mixture. • Take 100 grams of grated paneer (or homemade paneer), add salt to taste, and some pepper powder. • Preheat the appe pan and grease it lightly. Pour a layer of the batter into each cavity of the pan. Add a portion of the paneer mixture on top of each, then cover with another layer of the batter. • Cook for 3-4 minutes until the appes are golden and cooked through. • Enjoy your healthy beetroot appes!
