Arrowroot flour • 1/4 cup butter (softened) if using salted omit the salt • 2/3 cup granular monkfruit sweetener • 1/4 cup oil • 2 tsp. vanilla • 1/4 cup rum • 2 eggs (room temp) • 1/2 tsp. liquid stevia • Preheat oven to 325 degrees. Whip the soft butter and sugar for 4 minutes add desired oil, stevia and vanilla extract, whip to combine, add rum and whip, then add one egg at a time, making sure it all is combined well. Gently stir in your sifted dry ingredients until well combined. Place in a greased loaf pan and bake for 50-60 minutes depending on the oven. Turning halfway threw for even baking. • Simple Syrup • 1/4 cup granular monkfruit • 1/2 cup water • pinch of xanthan gum • Heat sugar and water until boiling and completely dissolved, whisk in xanthan gum and boil for one minute.
