Thank you! • ⭐ SUBSCRIBE to my channel ➡ https://bit.ly/2ZUlSU1 • 💡Click on the [CC] text on top right and the three dots, click CAPTIONS to TRANSLATE, and you can activate sub-headings. • 💥 Chickpea Stew Ingredients: • 2 Tablespoons Olive Oil, plus more for serving • 1 Large Onion, chopped • 1 Tablespoon Ginger, chopped • 2 Garlic Cloves, chopped • 1 Teaspoon Salt, plus more to taste • 1/2 Teaspoon Black Pepper, plus more to taste • 1 Teaspoon Ground Turmeric • 1 Teaspoon Ground Paprika • 2 (15 ounce) Cans Chickpeas, drained and rinsed • 2 (15 ounce) Cans Coconut Milk, full fat • 2 Cups Vegetable Stock • 1 Cup Baby Kale (any green vegetable of your choice) • 1 Teaspoon Coconut Yogurt for serving (optional) • Chopped Parsley for serving (optional) • Toasted pita or flat bread for serving (optional) • Red Pepper Flakes (optional) • 💥 Chickpea Stew Instructions: • 1. Chop onions, finely chop garlic and ginger. • 2. Heat olive oil in a stock pot on medium heat. Add onion, garlic and ginger. Season with salt and pepper. Cook until onion is translucent and starts to brown, about 3-5 minutes. • 3. Add turmeric, paprika, chickpeas and season with salt and pepper. Cook, stirring frequently until chickpeas browned and crisp, 8 to 10 minutes. Remove 1/2 cup of chickpeas and set aside for garnish. • 4. Using a wooden spatula, crush the chickpeas slightly to release their starchy insides. This will help thicken the stew. • 5. Add coconut milk, vegetable stock and season with salt and pepper. Bring to simmer, cook until stew has thickened, about 30-35 minutes. • 6. Add kale or any greens of your choice, cook until wilt and soften, about 2-3 minutes. • 7. Plate and garnish with coconut yogurt, reserved chickpeas, freshly chopped parsley, a good drizzle of olive oil and toasted pita or flat bread.
