This is a shortcut style fudge that doesn't require a lot of cooking and stirring and doesn't need a candy thermometer, but it still quite good. • Watermelon pop video: • Watermelon Pops (Frozen Jell-O treat)... • Watermelon goodies playlist: • Watermelon Themed Food! • 12oz white chocolate chips • 16 oz can vanilla frosting • 1 tsp watermelon flavouring • pink an green food colour • 1 tbsp mini chocolate chips • Spray a pan lightly with cooking spray or line with aluminium foil or plastic wrap. The size and shape of pan is up to you. The original recipe calls for a 6x7 or 7x7 pan. I used an 8 inch cake pan. • Melt the chocolate chips in a double boiler and then blend in the frosting and watermelon flavouring. • Turn the heat off, but leave the pan over the hot water to keep the mixture liquid enough to work with. • Remove 3/4 (I SAY ONE CUP IN THE VIDEO, THAT IS AN ERROR) of a cup of the mixture and tint it green, spread the green mixture evenly into the bottom of the prepared pan. Place in the freezer for 2 or 3 minutes or until the mixture starts to feel set on the surface (will still be soft). • Measure out 1/2 cup of the white mixture and spread it over the green layer and freeze for 2-3 minutes • Tint the remaining mixture pink and spread over the white layer. Sprinkle the mini chocolate chips over the pink layer and press in gently. All to set completely (about and hour) in the refrigerator.
