Smash Burger with Mushrooms, Swiss Cheese, Truffle Sauce, and Leek • Ingredients:Woolworths Smash Beef Burgers 6 pack • 6 Brioche buns • 1 large leek (white and pale green parts only • )400g Swiss brown mushrooms, sliced • 1 tbsp Worcestershire sauce • 6 slices of Swiss cheese • 2 shallots, finely diced • 2 tbsp unsalted butter • 1 cup neutral oil (for frying leeks) • Truffle Sauce: • ½ cup mayonnaise • 2 tbsp wholegrain mustard • 1 tbsp truffle oil • 1 tsp salt • ½ tsp cracked black pepper • Method: • Mix the mayonnaise, wholegrain mustard, truffle oil, salt, and pepper in a small bowl. Set aside.Wash leek thoroughly then thinly slice and pat dry. Heat avocado oil in a small pan to 150°C (300°F). • Carefully add the leeks and fry for 1-2 minutes until golden.Be careful as it will spit a little oil. Remove and drain on paper towels.Melt butter in a pan over medium heat. • Add the diced shallot and cook until translucent. Stir in the mushrooms with a pinch of salt and pepper then add in your Worcestershire sauce, sauté until softened. Set aside.Heat a pan with neutral oil (like avocado oil). Place a smash burger patty in the pan. • Press down with parchment paper and a spatula to flatten the patty. Cook for 1½ minutes on high heat, then flip. Add a slice of Swiss cheese to each patty after flipping and cook until melted. • Toast the brioche buns. Spread a layer of truffle sauce on the bottom bun.
