Wow, just WOW. I was this old when I discovered Achiote Red Paste. The fantastic aroma of the marinade and the stunningly fun bright red look of the chicken make for great entertaining. • Certainly one of the secrets to success is the combination of charcoal and mesquite wood – hard to find in splits, but easy to find in chunks by the bag.
