One of my favorite dishes from Southern Louisiana is the 2nd Line classic: Jambalaya. Not only do I love all the spice that the dish packs, but I love how easy it is to make. Once you've got the ingredients, you can produce the dish in under two hours time, which isn't bad considering it can be made in huge batches to feed a crowd. The most unusual ingredient in the dish is a type of ham widely found in the bayou, known as Tasso.
