Ratatouille (or Confit Byaldi) from @Disney @Pixar’s Ratatouille is officially the star of the first episode of my brand-new series - Cooking Disney Magic! • I’m so proud to start this journey of cooking all the wonderful dishes from Disney, @Disney Parks, Pixar, @Star Wars, and @Marvel Studios each week! It’s also just one part of my coverage of all things Disney and Disney Parks! • This recipe was inspired by @Binging with Babish (https://www.bingingwithbabish.com/rec...) and it was a joy to make and one I’ve wanted to do since I first saw the wonderful Ratatouille! • I truly hope you enjoy, and let me know what you want me to cook in the future! • Ingredients: • 6 roma tomatoes • 2 red bell peppers • 1/2 cup vegetable stock • 1/2 cup water • 2 sprigs rosemary and thyme • 1 clove garlic • 1/2 small onion • 3 tbsp olive oil • 2 zucchini • 2 yellow squash • 2 japanese eggplants • 1 tbsp balsamic vinegar • Salt and pepper to taste • 1. Pre-heat oven to 225 and then cut an X into four of the tomatoes and let them sit in a pot of boiling water for about one minute. Take the tomatoes out and then put them in a bowl filled with ice and peel when cool. • 2. Put the two red peppers on a stovetop gas burner and let them char up nicely. Next, put them in a bowl and let them steam under foil for about 5 minutes. Put them under water and clean all the char off the peppers. • 3. Put the peppers, leftover tomatoes, rosemary, thyme, garlic, onion, vegetable stock, water, and olive oil in a blender. Blend until smooth and then pour into a baking dish. • 4. Using a mandolin or knife, slice the blanched tomatoes, zucchini, yellow squash, and japanese eggplant into thin pieces. Arrange them beautifully on top of the sauce by overlapping the last one, and then top with rosemary, thyme, salt, pepper, and balasmic vinegar. • 5. Put parchment paper on top and bake for 70 minutes. Pull the dish out, remove the parchment, and cook for another 20 minutes. • 6. Use a ring mold (or not!) and arrange on a plate, drizzle sauce around the plate, and, as Remy did, put a chive on top to make it even better! • 7. Realize that, yes, anyone can cook!
