On our small dairy farm in Ireland, we're shifting away from larger Red Holstein Friesian cows to breed smaller, more compact cows. While big cows produce high milk volume, the smaller breeds give higher concentrations of valuable milk fat and protein - which is what we get paid for. • This transition is better for the environment too. Smaller cows eat less grass, produce less slurry/manure and have a lower carbon footprint overall.
