Smoking Woodpigeon meat really transforms it. It goes especially well with something spicy and something sweet ie: sweet chilli sauce. • Instructions • 1. Leave the Pigeon Crowns in salty water for an hour and let them drain overnight. • 2. Put them in the smoker with Oak sawdust for 24 hours or more replenishing the sawdust every 8 hours. Ensure the smoker does not go above 90 degrees. • 3. Put the Pigeon Crowns in an oven with a tray of Oak sawdust for an hour at 90 degrees. • 4.
