Marsia Taha is the head chef of Gustu in La Paz, where sustainable Bolivian alligator meat is a staple on the menu. • The chef, winner of the Latin America’s Rising Star Female Chef Award, is bringing traditional, local cooking back from the brink of extinction: in this video Marsia shows us how she prepares raw alligator meat with plantain oil, lacto fermented plums, alfalfa sprouts and avocado with hot gusanito chilli, topped with citrus granita. • The Latin America’s Rising Star Female Chef Award is part of this year's edition of Latin America’s 50 Best Restaurants, which has pivoted to identify the greatest restaurants in the region of the last nine years with a one-off list of Latin America’s 50 Best Restaurants 2021: Pasado y Futuro, which compiles the votes of all previous editions of the awards.
