Tune in and tune up with us! • And let us know in the comments any questions you have or anything you'd like to see more of. • We're here to serve and support YOU. :) • KEY TOPICS: recovery through food, SIBO, IBS, IBD, digestive distress, elimination diet • RECIPE: Lemon Dill Cod and Broccolini with Tahini Dressing • INGREDIENTS: • Cod Recipe: • 4 cod fillets • 4 Tbsp grassfed butter • 2 sprigs fresh dill, roughly chopped • 1 lemon - 1/2 sliced in thin rounds, the other 1/2 juiced • Salt and pepper to taste • Broccolini: • 1 bunch broccolini, washed and trimmed • 2 Tbsp tahini • 1 Tbsp lemon juice • 3 Tbsp EVOO • PREPARATION INSTRUCTIONS: • Melt butter in large skillet over medium to medium-high heat. • Sprinkle salt and pepper over both sides of cod fillets. • Add cod fillets and cook 2-3 minutes, then flip. • Layer lemon rounds on top of fish fillets. • Let cod fillets cook an additional 2-3 minutes, then add lemon juice. • Spoon lemon butter mixture in pan over tops of fish every minute or two until the liquid has reduced and the fish have completed cooking. • Just at the end, sprinkle fresh dill over fish. Let cook 1-2 minutes more, then remove from heat. • Meanwhile, while the fish is cooking, steam, sauté or roast the broccolini until tender. • Combine tahini, lemon juice and EVOO in a small bowl and whisk until smooth. • Plate fish and broccolini.
