In this video, I make a delicious slow cooked massaman chicken curry. You can make the curry paste from scratch for a bit of extra flavor rather than using jar paste. • I find that this recipe makes enough curry to feed about six to eight people. I do recommend making some steamed rice or cauliflower rice to go with it. • Some tasty naan bread will also work great with this curry. You can get some at the local supermarket, or you can make some at home. • All the ingredients that you will need to make this curry are listed right below. • 1 kg (2.2 lb) chicken thigh, cubed • 6 Tbsp Massaman curry paste • 500g (1.1 lb) potatoes, large cubes • 2 onions, quartered • 640ml (22 fl oz) coconut cream • 1 tsp tamarind concentrate • ¼ cup brown sugar • To Thicken • 2 Tbsp cornstarch • 2 Tbsp water • You can replace the chicken thigh with chicken breast or another cut of meat. I find that chicken thigh cooks excellent in the slow cooker as it does not go as dry as chicken breast. • More vegetables can be added to the curry for a bit of extra flavor. Carrots, bell peppers, mushrooms, or even green beans will work nicely in this curry. • As I mentioned earlier, you can make a curry paste from complete scratch.
