I use local produce and sustainably sourced organic ingredients to create healthy Asian Fusion cuisine! • Follow me on: • Instagram: / flavoursofjosh • Facebook: / flavoursofjosh • Savvy Spices • https://www.savvyspices.com.au/ • / savvyspices • Ingredients • 500g chicken thighs (Paneer for vegetarian option) cut into 3cm x 3cm pieces • 2Tbsp olive oil for marinate • 2Tbsp lemon juice • 2tbsp ghee or olive oil • 1 tsp cumin seeds • 100g onions, finely • 1 Tbsp garlic paste • 700g Tomatoes, puréed • 1 Tbsp “From the Tandoor” blend by Savvy Spices or Butter chicken seasoning • 2 Tbsp sugar • 1 Cup milk, warm or room temperature • 3 Tbsp cream, room temperature • Salt to taste • Method • 1. Marinate chicken with 1 Tbsp “From the Tandoor” blend, 2tbsp olive oil, and salt, for an hour. • 2. Grill the chicken n keep aside. • 3. Heat ghee/oil and add the cumin seeds. • 4. Add the onions and cook until golden. • 5. Add garlic and cook for few seconds to release flavour. • 6. Add 2-3 Tbsp(depending on your spice level preference) of “From the Tandoor” blend or butter chicken seasoning, cook for few seconds. • 7. Add puréed tomatoes and salt, bring to boil, reduce heat, cover and cook for 15 mins. Uncover and cook on low heat until mixture thickens and the oil separates from it. • 8. Add sugar and mix well. • 9. Add the milk, stirring constantly to prevent from curdling. • 10. Bring to boil and then add cream. • 11. Cook for another 5 mins and then add the chicken. • 12. Adjust seasoning and serve with rice or flat bread.
