Prepare the Millet and Dal: • Rinse the foxtail millet and soak it over night. • Rinse the moong dal. • 2. Saute the Spices and Vegetables: • Heat ghee or oil in a pressure cooker or deep pan. • Add mustard seeds, cumin seeds, and curry leaves. Let them splutter. • Add chopped onion and green chilies. Saute for a minute. • 3. Cook the Vegetables: • Add the chopped carrots, beans, potatoes, and peas (if using). Saute for 2-3 minutes. • Add a pinch of hing, turmeric powder, coriander powder, black pepper, and salt. Stir well. • 4. Add Millet and Dal: • Drain the soaked millet and add it to the pan and the moong dal. Mix everything well. • Saute for a minute so the millet and dal are lightly toasted in the ghee. • 5. Add Water and Cook: • Add 6 cups of water to the mixture. Stir well. • Add chopped coriander leaves. • Close the lid of the pressure cooker and cook for 2-3 whistles on medium heat. If using a deep pan, cover and cook on low heat for 15-20 minutes or until the millet and dal are soft and mushy. • 6. Finishing Touch: • Once cooked, let the pressure release naturally if using a pressure cooker. • Open the lid, and stir gently to combine. Adjust the water if the khichdi seems too thick, depending on your preferred consistency. • Serving: • Serve hot with a dollop of ghee on top, along with yogurt, pickle, or papad. Enjoy your comforting and healthy foxtail millet khichdi!
