Sambar Powder Recipe • Ingredients: Coriander seeds - 4 tbsp • Red Chilli - 17 no.s • Chana Dal - 2 tbsp • Urad Dal - 1 1/2 tbsp • Cumin seeds - 1 1/2 tbsp • Peppercorns - 1 tbsp • Fenugreek seeds - 1 1/2 tsp • Mustard seeds - 1 1/2 tsp • A few Curry leaves • Turmeric powder - 1/2 tbsp • Asafoetida powder - 1/2 tbsp • Method. • There are three steps. Step 1: Roast the ingredients one after the other • (In making your own Sambar powder, you have to be very sensible to change in color and smell while roasting the ingredients :) Roasting is the most crucial step. • Caution: Do not let any of the ingredients burned. Roast till you get a nice aroma. shift it to a container and let it cool down). • Step 2: Let them cool down • Step 3: Grind in to powder • 1. Roast 1/2 cup Coriander seeds till light brown in color. • 2. Roast about 17 long dried Red Chilli. • 3. Roast 2 tbsp Chana Dal. • 4. Roast 1 1/2 tbsp of Urad Dal. • 5. 1 1/2 tbsp of Cumin seeds. • (Cumin seeds roast very fast. so be cautious don't burn it) • 6. 1 tbsp Peppercorns. • 7. 1 1/2 tsp of Fenugreek seeds. • 8. 1 1/2 tsp of Mustard seeds. • 9. A few Curry leaves. • 10. Now, turn off the stove then add 1/2 tbsp of Turmeric powder, • 11. Add 1/2 tbsp of Asafoetida powder. • 12. Let the roasted ingredients cools down completely. • 13. Grind them into a fine powder. • Your Sambar powder is ready. • Let it cool down store in an airtight container.
