Pumpkin Bread

In honor of October 1st, I’m showing you how to make a pumpkin bread loaf. This one is sourdough, so I used an active starter, but if you're not into that, instant yeast works just as well. • Start by adding 330g of water (room temp or warm) to a bowl, then 100g of active starter, 405g of bread flour, 45g of whole wheat flour, and 10g of salt. Mix it all together until you get a shaggy dough, and let it rest for 30 minutes. After that, we’ll stretch and fold the dough by pulling each side over to the other. I do this about three times before letting it bulk ferment on the counter in the bowl. • Normally, you’d preshape it before putting it in the fridge, but I’m a little lazy, and this recipe is super forgiving. So, I fold the loaf like a burrito, and preheat the oven to 450°F. Now, I cut four pieces of kitchen twine and tie them around the loaf in a spider web design. Just be careful not to tie it too tight since the bread is going to expand. You can score it with some cute designs, then bake it for 20 minutes at 500°F, covered, and another 20 minutes at 465°F, uncovered. Cut 4 pieces of kitchen twine and tie them around the loaf like a spider web (not too tight to allow for expansion). • 6. Score the dough for decoration, then bake at 500°F for 20 minutes covered, followed by 20 minutes uncovered at 465°F, until golden brown. • 7.
