So, I found this recipe online and used my Rice Cooker to bake it. It was DELICIOUS! I adjusted the sugary ingredients for my taste, skipping the frosting and topping completely. Try using your rice cooker and let me know how yours turned out! Sweet eating! • EASY RICE COOKER CAKE RECIPES: Cranberry Coffee Cake • Ingredients: • 2 eggs • 1 cup sugar granulated • 1 tsp vanilla extract • 1 cup all-purpose flour • ¼ tsp baking soda • ½ tsp baking powder • ½ - 1 tsp ground ginger (I used 1/2 tsp) • ½ cup melted unsalted butter • ½ cup buttermilk or sour cream (I used 1/2 cup cream cheese) • ¾ cup white chocolate chips (I used 1/3 cup dark chocolate chips) • 1 cup dried cranberries soaked in warm water for 20 minutes, then well drained and towel dried • Cream Cheese Frosting Ingredients: • (I skipped this as I don't like my cake too sweet and I'm a minimalist!) • 8 oz cream cheese softened • ½ cup powdered sugar • 1 tsp vanilla extract • ½ tsp orange extract or zest of ½ orange • Topping: • (I skipped this too - me... minimalist) • 2 Tbsp white chocolate chips melted • 2/3 cups dried cranberries soaked in warm water for 20 minutes, then well drained and towel dried • Instructions • 1. In a large bowl add 2 eggs, 1 cup sugar, 2 tsp vanilla and whisk until combined. • 2. Add 1 cup flour, ¼ tsp baking soda, ½ tsp baking powder, 1/2 tsp ground ginger and whisk just until incorporated. • 3. Next add ½ cup melted butter and ½ cup cream cheese/buttermilk/sour cream, whisking after each. • 4. Fold in 1 cup (or ¾ cup if you are making toppings) cranberries and 1 cup white chocolate chips. • 5. Spray your rice cooker and pour the batter and spread it evenly. • 6. COOK for 2 to 3 cycles (check after 2nd cycle until a chopstick/toothpick inserted into the center comes out clean. 7. Invert it onto a plate then turn it right side up.
