Rice Salad with Suwandel rice - capsicum, spring onion, zucchini, carrot parsley • Follow us : / saaraketha • Recipe • ———————————————————— • Rice Salad • ———————————————————— • Ingredients • 3 Cups Cooked Rice • 1.5 medium Zucchini • 2 medium Carrots • Bunch Spring Onions • One large Capsicum • 1 Cup Chopped Parsley • 1/2 Cup Sunflower Seeds • 1/2 Cup Sultanas • 1 Cup Chopped Dates • 1/2 Cup Pumpkin Seeds • 1 Cup Walnuts • ———————————————————— • Dressing • ———————————————————— • Ingredients • 1 Cup Olive Oil • 1/3 Cup Lemon Juice • 1/3 Cup Apple Cider Vinegar • 2 Tbs Raw Honey • 2 Tsps Cumin Powder • 1 Tsp Sea Salt • To make the Salad- • Process the vegetables. Dice the capsicum, shared the carrot and zucchini and finely chop the spring onions. • In a large mixing bowl, add the cooked rice and to this add the vegetables. • Then add all other ingredients. • Mix well using your hands or a ladle. • Add all Dressing ingredients and blend well using a high speed blender. • Then add this to the salad and mix well. • This is a very versatile recipe. you can substitute the above ingredients with any other vegetables (eg Corn, Beans, Celery)and any other nuts or seeds (eg Almonds / Cashews / Pine Nuts) and the quantities are also variable. • Put it in a refrigerator to cool if necessary. It can be consumed warm or cold.
