Thanks for your support. • Recipe is below: • Easy Minced Pork And Eggplant Stir Fry • 1 large or 2 small eggplant • 4 to 6 oz. minced pork (ground pork) • 2 + 3 tablespoons cooking oil • 1/2 teaspoon + 1/2 + teaspoon salt • 1 tablespoon sliced ginger • 1 tablespoon chopped garlic • 1/2 teaspoon chicken soup base • 1 tablespoon Chinese oyster sauce • 1 tablespoon light soy sauce • 1 teaspoon sesame oil • 1/3 cup chopped green onions • 1/3 to 1/2 cup water • Cut eggplant into large slices. Cut off some of the outside for visual effect. In a bowl, marinade the minced pork with 1/2 teaspoon salt and 2 tablespoons cooking oil. Marinade for at least 1 hour. • Heat wok at medium heat. Add 3 tablespoons cooking oil, ginger and garlic. Stir fry briefly. Add minced pork, sear briefly and then stir fry for 30 seconds. Add eggplant. Add 1/2 cup of water and cover with a lid. Cook for 2 to 3 minutes. Add less water for firmer eggplant. • Remove lid and do final stir fry. Add oyster sauce, soy sauce, sesame oil and green onions. Mix all ingredients to coat pork and eggplant. Serve on a nice plate. Enjoy!
