Dry brine turkey on a pellet grill

Check out how easy juicy turkey is! • Dry brining is the way of the future! Dry brining is a simple yet highly effective technique for seasoning and tenderizing your turkey. By rubbing the bird with a mixture of salt and other spices, the process draws out moisture from the turkey, which then dissolves the salt. This creates a natural brine that gets reabsorbed into the meat, enhancing flavor and moisture retention. Unlike wet brining, it doesn’t require extra space for a large container or dilute the turkey’s natural flavors. The result? A turkey with deeply seasoned, juicy meat and perfectly crisp, golden-brown skin. • Dry brine your bird for at least 24-72 hours for maximum flavor. • I used 2 tbsp coarse kosher salt and 1 tbsp recteq holiday pork seasoning and 1 tbsp recteq poultry seasoning for my dry brine mixture but use what you have available. • Remove the tail with a knife and any extra skin or meat you don’t want to eat. You can also spatchcock the bird. • See my video on how to spatchcock poultry. • Separate the skin from breast and thigh meat making sure not to tare skin. Season under skin and massage into protein and season the outside of turkey. Place it in a wire rack in a sheet pan and then into the refrigerator. Allow to dry brine in your refrigerator for 24-72 hours. For this bird we could only wait 24 hours. • Burning the oak blend pellets, preheat your grill to 315°F. Remove turkey from the refrigerator and season lightly with additional recteq poultry seasoning and place into grill. This bird took exactly 3 hours at 315° to reach an internal temperature of 160°F in the breast and about 180°F in the thigh meat. • We checked it with a Thermopen instant read thermometer. • I then placed it in a recteq disposable aluminum full pan, covered with foil and then put it in my resting box.
