Smoked beef back rib recipe

Today I have a simple recipe to smoke some beef back ribs. Im running the smoker at 275 for close to 3 hours, then start checking for tenderness. They are done when you can slide a probe easily through the meat like softened butter. Then wrap them in butcher paper and let rest for around 30 minutes.
