This terong balado isn't spicy at all. • I made a large batch to store as well. • Ingredients: • 3 eggplants • Oil for frying • 2 tsp sugar • 1 tsp salt • 1 tsp pepper • 2 tsp granulated mushroom (optional) • Spice Paste: • 3 sweet palermo • 5 cloves garlic • 2 shallots • Instructions: • 1. Wash and cut the eggplants as desired, then set aside. • 2. Blend the spice paste ingredients until smooth and set aside. • 3. Heat oil in a pan (using a lid to prevent splattering) and fry the eggplants until cooked and tender. Set aside. • 4. In the same pan, sauté the spice paste until it loses its moisture and the oil separates, ensuring it is not bitter. • 5. Once the spice paste is cooked, add the fried eggplants. • 6.
