Website: • Yield: 1 Loaf - Prep Time: 15 M - Cook Time: 60 M - Total Time: 1 H 15 M • INGREDIENTS • 150 g dates, pitted • 4 bananas, peeled and sliced • 250 ml almond milk • 300 g spelt flour or whole wheat flour • 1 tsp baking powder • 1 tsp baking soda • pinch salt • 1 tsp cinnamon powder • 1 tbsp lemon juice • 50 g walnuts, chopped • 1 tbsp coconut oil or vegetable oil, for brushing loaf pan • For top: • 1 banana, peeled and halved • t tbsp walnuts, chopped • INSTRUCTIONS • 1. Preheat the oven to 175C 347F and grease a loaf pan with coconut oil or another vegetable oil. • 2. In a foodprocessor, combine the pitted dates, sliced banana and almond milk. Pulse until smooth. • 3. In a medium mixing bowl, combine the flour, baking soda, baking powder, cinnamon powder, pinch salt, almond milk mixture and lemon juice. Stir until well combined. Stir in the walnuts. • 4. Pour the batter into the greased loaf pan. Top with the halved bananas and walnuts. • 5. Bake in preheated oven for about 60 minutes or until a toothpick inserted into the center comes out clean.
