Two Ingredient Purple Sweet Potato Gnocchi!!! • #gnocchi #makingpasta #italian • Instagram Credit • @raw_manda • Ingredients: • 2 large sweet potatoes • ~ 1 cup flour • 1 tsp salt (optional) • Instructions: • Bake (1 hour) or microwave (10-15 mins) potatoes until soft. Once your potatoes are cool enough to handle, peel the skin off and mash up with a fork. Sprinkle in a teaspoon of salt and add just enough flour (about 1 cup) so your dough isn’t sticky, but not too much otherwise your gnocchi will be tough and chewy. Dust the surface with additional flour and divide the dough into 4 balls, roll out each ball into 3/4 inch strands. Cut your strands into square pieces and then add your gnocchi to boiling water. Your gnocchi will float to the surface once they are ready to eat! Fry your gnocchi in oil or vegan butter to make them crispy!! Serve with your favorite sauce and enjoy!
