Cheddar Mozzarella Mac and Cheese

🧀Ingredients: • -1 box of conchiglie or whatever macaroni noodle you like • -6 tbsp unsalted butter • -1/3 all purpose flour • -2 1/2 - 3 cups whole milk • -1/2 cup heavy cream • -2 - 2 1/2 cups sharp cheddar cheese, shredded • -2 cups mozzarella cheese, shredded • -1/2 cup parmesan cheese, shredded • -1 tbsp olive oil • Seasoning: • -1/2 tsp garlic powder • -1/2 tsp chili powder • -1/2 tsp paprika • -1/2 tsp mustard powder • -1/2 tsp parsley • -Salt + pepper • 🧀Directions: • -Bring a large pot of water to a boil. Shred your cheeses, set aside. • -Add 1/2 tsp salt to boiling water. Cook pasta a dash over al dente. It took me 16-17 minutes for this noodle. Drain pasta and coat with 1 tbsp of olive oil. • -Melt 6 tbsps of butter in a large skillet. Stir in flour over medium low heat. Continuously stir until there is no clumps for 1 minute, it will bubble. • -Moderately stir in milk, heavy cream and seasonings until smooth. When you see bubbles stir for another two minutes until slightly thicker. Turn heat off. • -Add 2 cups of your cheese, stir and then add the rest of your cheese. Stir until smooth. Add pasta and mix until all noodles are coated.
