This recipe is my version of a French classic, Chicken Fricassee. Juicy, tasty, and delicious. I served my fricassee over white rice. This is an easy recipe that taste as if was just made by the best French chef in town. • Ingredients: • 5 pounds or 2kL boneless, skinless chicken breasts (you can also use thighs), season with salt and pepper • 2 cups or 500mL chicken broth • ½ cup or 118mL sour cream • 3 large egg yolks • 4 tablespoons or 56g unsalted butter • 3 tablespoons or 45mL olive oil • 2 tablespoons or 24g unbleached all-purpose flour • 1 diced medium onion • 1 teaspoon or 2g grated nutmeg • 3 mashed garlic cloves • 3 teaspoons or 15mL tarragon leave • 8 ounces (1-pound) or 227g sliced mushrooms • 3 teaspoons or 15mL lemon juice • 1 cup or 250mL dry white wine • 1. Clean and dry the chicken with a paper towel. Season with salt and pepper. • 2. In medium temperature, heat the butter and the olive oil in a big skillet or frying pan. • 3. Place the chicken in the skillet or pan and cook until browned in booth sides. • 4. Transfer the chicken to a platter. • 5. Add the mushrooms, onion, and wine to empty skillet and cook, stirring until the liquid evaporates and the mushrooms are browned. • 6. Add the flour and garlic and cook, stirring for approximately one minute. • 7. Add the broth and let it boil scraping the bottom of the skillet and mixing together. • 8. Reduce the heat to medium-low, add the chicken, cover, and simmer for 10 minutes. • 9. Transfer the chicken once again to a serving platter. • 10. Wisk together the sour cream and the egg yolks and add the mixture to the sauce in the skillet. • 11. Stir well and add the lemon juice, the tarragon and nutmeg, and let it come to a boiling. • 12.
