How to make Eton Mess

A classic British dessert made simply with strawberries, cream and meringue! Very quick and easy recipe. You can find all my recipes on my blog http://www.carolineartiss.com/ Full Recipe below. • Ingredients: • Serves 4 - 6 • 200g fresh raspberries • 2 tbsp icing sugar • 500g strawberries, hulled, quartered • 300 ml thick cream whipped • 6 meringue nests • Method: • Place the raspberries and sliced strawberries in a bowl with the sugar, stir and squish slightly together. • Whip the cream until it forms stiff peaks • Crumble in 5 of the meringue nests on top of the whipped cream, small and big chunks is good, you still want to be able to have a crunch when you serve them. • Keep 1 cup of the berries to one side and pour the rest into the cream and using a large metal spoon give it a couple of folds together.
