Pinakbet or pakbet originated in Ilocos Region. It consists of local vegetables like bitter melon, squash, lima beans, sweet potatoes, eggplants, okra and string beans combined with pork. The Ilocano way of cooking Pinakbet uses fish bagoong sauce instead of bagoong alamang.
