Easy Pasta e Fagioli | Italian Pasta Soup • When I was backpacking in Italy many years ago and had very little money for food at restaurants this is what I would order. This soup is a meal in itself and tastes like a hug. It’s also great for meal prep or for feeding a group since it’s so filling and satisfying. • ⁃ 15oz can of white beans • ⁃ salt • ⁃ 4 carrots chopped • ⁃ 1 leek, white and pale green parts chopped • ⁃ 6 peeled garlic cloves • ⁃ ⅓ cup olive oil • ⁃ Freshly ground black pepper • ⁃ 1 tbs beef bouillon • ⁃ 4 cups fresh water • ⁃ 1 28-oz. can whole peeled tomatoes • ⁃ 2 bunch (or one bag) Tuscan kale leaves torn • ⁃ Parmesan rinds (optional) • ⁃ 2 bay leaves • ⁃ 8 oz. small pasta (such as elbows or ditalini) • ⁃ To Serve: Finely grated Parmesan and crushed red pepper flakes • 👩🏻🍳To make: - Pulse carrots, leek, and garlic in a food processor until finely chopped. - Heat olive oil in a large pot over medium and cook “soffrito” the vegetables from your food processor (leek, carrots, garlic), season generously with salt and pepper • ⁃ Cook vegetables stirring often for about 15 minutes putting the lid back on in between stirring. • ⁃ Add beans, tomatoes, and kale; season with salt and pepper. • ⁃ Add 1 tbs beef bouillon and 2 cups of the water, bring to a simmer then add Parmesan rinds (if using) and bay leaves. • ⁃ Cook soup adding remaining 2 cups water (or stock). Check seasoning and add more salt and pepper if needed • ⁃ Separately: Cook pasta in a large pot of boiling well-salted water, until very al dente, about 1/2 time of package directions. Drain pasta and add to soup.
