Coconut Curry Salmon w Coconut Basmati Rice

Hey guys! Welcome to my kitchen! Today I'll be making coconut curry salmon, and also a fragrant coconut basmati rice on the side. Ingredients and method are listed below: • Ingredients: • For the marinade: • 2 lb salmon fillets • 1 tsp Jamaican curry powder • 1 tsp black pepper • Salt to taste • 3 sprigs of fresh thyme • For the curry: • ½ medium sized onion, chopped • 4 cloves garlic, chopped • 3 scallions, white part chopped • 4 sprigs of thyme • 2 tsp Jamaican curry powder, • 1 tsp turmeric • 1-½ tsp black pepper • ½ scotch bonnet pepper or habanero • Salt to taste • 3 carrots, thinly sliced • 1 green bell pepper, thinly sliced • 1 can coconut milk • For the coconut rice: • 1 cup of rice • 1 tsp sazon • 1 cup coconut milk • 1 cup water • Salmon Method: • 1. In a large bowl, add the marinade spices listed above to the salmon, and mix everything really well. Set aside to marinate for 20-30 minutes. • 2. In the meantime, thinly slice the carrots, and green bell pepper. Set aside. • 3. Chop the onion, scallions, and garlic for the curry sauce. • 4. In a medium sauté pan, sear the salmon on both sides. You do not have to fully cook it as it will finish cooking in the sauce. • 5. In a large sauté pan, or pot, add oil, and lightly sauté the onions, garlic, and the white parts of the scallions. Also add in the thyme and let everything cook together in the oil. • 6. Add the curry powder and cook it for a couple of minutes till the rawness of the curry has cooked off. Then add the turmeric, and cook for another minute. Add ½ cup of water so the curry powder and turmeric doesn’t burn. 7. Gently mix everything. • 8. Add the carrots and let them cook for 2 minutes. Add the green bell peppers. Add in water to let it simmer. At this stage, you want to add your salt, black pepper, the scotch bonnet or habanero if using. Cover and let it simmer for a few minutes. • 9. Add the coconut milk, stir and let it simmer. • 10. Gently place the seared salmon fillets into the curry sauce and vegetables that have been cooking. Pour some of the sauce onto the fillets so the flavor can all come together. • 11. Cover and cook for about 8 minutes until the salmon is done. • Rice Method: • 1. In a medium pot, add oil and let it heat up. Add the rice that should be washed in cold water till the water runs clear. Stir it up. • 2. Add the coconut milk, and water, also add the sazon and mix everything gently. • 3. Let it all come to a boil and simmer. Cover and cook the rice till it is done. Should take about 15-20 minutes, depending on the rice you use. • Garnish the salmon with the green part of the scallions chopped finely. Serve hot with the coconut rice. • I hope you enjoyed this recipe video!
