Braised Mexican Chuck Roast

This shredded beef chuck roast is mild yet full of Mexican flavors — perfect for tacos, burritos, tostadas, enchiladas, or taquitos. This pulled beef freezes well and reheats easily for a variety of fast, Mexican-inspired meals. • ingredients: • — 1 lb chuck roast or short ribs • — taco seasoning of choice (or make your own!) • — salt to taste • — two cups beef bone broth • — avocado oil or beef tallow or ghee • — sweet onion, sliced • — one 14 oz can crushed tomatoes • — one jalapeño, seeded and chopped (optional) • — juice of one lime • — cilantro for topping • Instructions • preheat oven to 325 • -cover meat in salt and taco seasoning (season to your preference) • -heat a Dutch oven over medium heat with a little oil of choice • -sear meat on all sides until equally browned • -remove the meat and add onion so it begins to sauté • -add bone broth to deglaze and scrape up brown bits • -add crushed tomatoes, jalapeno, and juice of one lime, taste and adjust for salt • -add beef on top and cover with the lid • -braise the beef in the oven for about three hours or until its falling apart. Enjoy on tacos, in a burrito, or in a bowl. • *Or you could dump and go in a slow cooker like I did.
