Cooking Dall Sheep Ribs and Roast

Randy Newberg and Marcus Hockett have just returned from their long trip in Alaska hunting Dall Sheep! Fortunately, both of them were successful and are loaded down with wild sheep meat. • Today Marcus is going to cook a Dall Sheep roast and ribs. This meal was a hit with friends and family. The recipe can easily be replicated with any wild game, so give it a try and let us know what you think! • Here is how each was prepared: • DALL SHEEP BONE IN ROAST • -Make a simple brine. Here Marcus used salt, brown sugar, garlic. • -Cut holes in meat and press garlic cloves into meat. Then if you have a meat injector inject the meat with brine. • -Place meat into brine and then into the refrigerator for 24 hours. • -Put meat on smoker on high heat, sear both sides to lock juices in the meat. • -Reduce the heat to low/smoke setting and let smoke for 5-6 hours. • DALL SHEEP RIBS • -Put some salt and pepper on those bad boys. Add some flower too because we are going to braise them soon. • -Sear the ribs. • -Braise the ribs for a long time, until the meat fall off the bone. In this case 6 hours. Marcus used beer, and stock with some tomato paste. PRO TIP: If you decide that you want to use beer. Don’t use IPA’s or expensive beer.
