A few things we hate, bad puns and crummy attempts at a good fish. That’s why we are making Butter Crumb Haddock, a really decadent way to prepare a great fish that is almost universally served fried. Whether you practice Lent (the only thing we’re giving up for lent is looking at the numbers on the scale), or just want a new way to try a great piece of fish, we’re gonna butter you up good. Taking a classic restaurant recipe that’s simple to make at home, we’re gonna put on the ritz with some buttery Ritz crackers, deluxe dried breadcrumbs, some fresh spices and a little white wine to give you a really bright, tasty dinner during these colder months. Get out your top hats and monocles, because even though this tastes really fancy, it’s one of the easiest things you’re ever gonna make. Now you can see why it sells out so often. With all these cracker jokes, we really crack ourselves up sometimes. • -- • Ingredients • • 3/4 C crushed Ritz crackers • • ¾ C dried bread crumbs with Italian seasoning (we used a loaf of Pastabilities’ bread and mixed it with 3 tsp of dried italian seasoning) • • 4 Tbsp butter, melted • • ¼ C finely grated parmesan cheese • • 3 Tbsp of butter set aside • • 1-1.5 shallots, finely chopped • • 1 roasted clove are garlic, finely chopped (can easily substitute with ½ tsp of garlic powder) • • 1 tsp dried parsley • • The juice and zest of 1/2 lemon, plus more lemon wedges to serve • • 1/2 tsp onion powder • • 1-2 shakes of crushed red pepper • • ½ Tbsp of a dry white wine for topping mixture • • 2 Tbsp of dry white wine for baking • • 4 nice, big filets of haddock (feeds four people) • • Sea salt and freshly ground black pepper to taste • • Fresh parsley for garnish • • Cooking spray • -- • Directions • • Take the melted butter and mix with the cheese, cracker crumbs, breadcrumbs, chopped shallots, onion powder, garlic powder, lemon juice, dried parsley, crushed red pepper, ½ Tbsp of wine, mix thoroughly, set aside • • Preheat your oven to 400 degrees • • Pat your beautiful fish filets dry • • Season each side of the fish with salt and pepper • • Rub some more melted butter all over each piece of the fish • • Pour more melted butter into the glass dish, or spray it with cooking spray • • Lay your two fish filets down, skin side down, into the glass dish • • Cover each filet generously with the butter crumb mixture • • Pour the remaining wine around the fish, but not on it (this keeps it moist) • • Place in your oven for about 10 minutes, until the top of the mixture looks golden brown and a little crispy • • Lay ‘em down on a place and get to work • -- • Time Stamps • 0:00 Intro • 1:01 Make mixture • 3:21 Decorate fish with butter and wine • 3:47: Pour mixture on fish • 3:57 Slide it into the oven • 4:23 Cut into fish • 4:38 Take a bite! • -- • Want more monster recipes and see what we're about?
