#chickenkatsu #katsucurry #japanesefood #homemade • Chicken Katsu Curry • Crispy breaded chicken cutlets, with a gravy curry sauce served on top of steaming basmati, this dish is perfect for rice lovers. Sauce is made with a curry base of onions, ginger and garlic spiced with curry and garam masala. I've cooked mine with homemade chicken stock but you can use any standard chicken stock cube with warm water. • Serves 2 | Time 40m • For Curry Sauce; • INGREDIENTS • ▪︎ 1 medium onion, finely cut • ▪︎ 2 tsp fresh ginger, finely minced • ▪︎ 2 cloves of garlic, finely minced • ▪︎ 1 medium carrot, sliced • ▪︎ 1 tbsp plain flour • ▪︎ 1 tsp soy sauce mixed with 2 tsp honey • ▪︎ 2 tbsp corn flour mixed with 2tbsp water • ▪︎ spices - 1 tbsp mild/medium curry powder, 1/2 tsp garam masala, salt to taste • ▪︎ 2 1/2 cups / 600ml chicken stock (I’ve used my own, but you can use any chicken stock cube mixed with water) • METHOD • 1. In a pot, heat sunflower oil and add onions. Braise for about 5mins or until translucent then add the ginger, garlic and carrots. Cook for a few mins. • 2. Add curry powder and garam masala and cook for a minute until spices are fragrant. Then add the plain flour and cook for another min. • 3. Add the chicken stock. Then add in the soy mixed with honey and cornflour mixture. • 4. Simmer for 10-15mins, stirring often. When sauce is to preferred consistency season with salt to taste if needed. • For Chicken Katsu; • INGREDIENTS • ▪︎ 1 chicken breast, cut lengthways • ▪︎ 100g plain flour • ▪︎ 1 egg, whisked • ▪︎ 100g panko breadcrumbs • ▪︎ salt pepper to taste • METHOD • 1. Cut chicken breast lengthways • 2. Liberally season with salt pepper both sides • 2. Coat chicken with flour, then dip into whisked egg, then coat with breadcrumbs. Make sure to push the breadcrumbs into the chicken. • 3. Heat half an inch of oil in a pan / skillet. Place chicken into hot oil, and fry on med heat for 4-5mins per side, or until golden brown and chicken is cooked through. • 4. Drain on paper towel, then slice. • 5.
