Fast, easy, so tasty! • Keto Chicken Enchilada Soup Recipe • 32 oz chicken broth • 16 oz Las Palmas mild enchilada sauce • 2 cups cooked chicken • 1/2 cup sour cream • 2 cups shredded cheddar cheese • 1 teaspoon xanthan gum • 2 tablespoons chopped cilantro • Instructions: • Pour broth and enchilada sauce in pot, heat, add chicken. Stir in sour cream and heat to simmering, add cheese one handful at a time stirring to melt until incorporated, add xanthan gum and stir til thickened. Add chopped cilantro and take off heat.
