Despite most of people associate pasta all'amatriciana with Rome, the real origin of this amazing sauce is in its name. • All'amatriciana means Amatrice style and Amatrice is a small town that was prevoiusly part of Abruzzo Region, then became part of Lazio, the same Region of Rome (1927). • The ingredients are just a few and very simple, because they come from the shepherd's tradition, but, if you combine them together, the deliciousness is almost overwhelming. • Follow my instructions and you will understand what I am talking about. • I made this sauce with spaghetti, but in Rome and in other places in Italy it comes often with bucatini or other pasta formats. • The result will not change, it depends on your taste. • Also, some like to add garlic or onions, but if you want to stick to the original recipe this is the way to go and, trust me, this is just the best. :) • Unfortunately the town of Amatrice is famous worldwide not only for amatriciana sauce, but also because of the powerful earthquake that destroyed most of the buildings and totally erased the ancient ones back in 2016. • I would like to pay respect to the 235 people who lost their lives in that tragedy. • • INGREDIENTS (for two): • GUANCIALE - 10.5 oz • CHILI PEPPERS - 1 or 2 (FRESH or DRIED) • EXTRA VIRGIN OLIVE OIL • DRY WHITE WINE - 1/2 glass • WHOLE PEELED TOMATOES - 14 oz • SALT • PERCORINO ROMANO CHEESE • SPAGHETTI - 8.8 oz • INGREDIENTI (per due): • GUANCIALE - 300 gr • PEPERONCINO - 1 o 2 peperoncini (FRESCHI o ESSICCATI) • OLIO EXTRA VERGINE • VINO BIANCO SECCO - 1/2 bicchiere • POMODORI PELATI - 400 gr • SALE • PECORINO ROMANO • SPAGHETTI - 250 gr • Thanks for watching! • Follow me on Instagram: / thexingredient
