This plant based curry is truly a comfort food that truly satisfies, meat lovers will definitely enjoy this dish. • The mixture of the mushrooms provide a meaty texture, the flavours are lightly spiced and coconut creamy, this is a must try. • As part of our Lentils Stewed Recipe Collection, make a big batch on Sunday and use to make easy weekday meals like this one and many others. • Subscribe and don't miss upcoming recipes. • ****************************************** • Lentil Mushroom Curry • Ingredients • 2 cups Lentils Stewed    • Lentils Stewed | Vegan and Hearty | T...   • 1 Tbs Oil • 1 medium Onion chopped • 3 Garlic cloves diced • 1 tsp grated Ginger diced • 2 Chilies diced • 2 Tbs Curry powder • 2 Tsp Turmeric • Chopped tomatoes • 2 large portobello Mushrooms chopped • 1 cup cremini mushroom chopped • ½ cup Coconut milk • 2 cups Spinach • 1 small bunch Chive • 1 small bunch Cilantro • • Salt and pepper • • Garnish • Toasted coconut flakes • • Instructions • In a saucepan place oil and sauté onions until browned. Add garlic, ginger, and chilies and sauté for a minute. Add curry powder and turmeric, then add ½ cup water to cook curry for a bit. When curry mixture forms a paste add in tomatoes, salt, and pepper to taste. Add in mushrooms and sauté if mixture becomes thick add in a little water. When mushrooms have softened add in lentils and coconut milk, Stir to combine, then add in spinach, chive and cilantro. Taste and add salt and pepper if needed.
