🍒 SUBSCRIBE to my channel: https://goo.gl/fXFcUk • No Bake Berry Cheesecake - The most amazing, delicious cheesecake, perfect for hot summer days (well...perfect all year round 😊) This Berry Cheesecake is insanely good and flavorful with buttery and rich biscuit base, creamy cream cheese filling and various sweet and sour berries. • Ingredients: • Berry layer: • 10.6 oz (300 g) frozen or fresh berries (raspberries, strawberries, blackberries, cranberries) • 3 tbsp sugar • 2.36 us fl oz (70 ml) water • 5 gelatin sheets • bowl of cold/ice water • 1.7 us fl oz (50 ml) water • Biscuit base: • 13.8 oz (390 g) digestive biscuits • 6.7 oz (190 g) butter, melted • 3 tbsp milk • Cream cheese filling: • 5 gelatin sheets • bowl of cold/ice water • 1.7 us fl oz (50 ml) water • 16.9 us fl oz (500 ml) heavy cream • 14.1 oz (400 g) cream cheese, room temperature • 0.35 oz (10 g) vanilla sugar OR 1 tsp vanilla extract • 7.05 oz (200 g) powdered sugar • ▪ ▪ ▪ ▪ ▪ ▪ ▪ ▪ ▪ ▪ ▪ ▪ • Molim vas, kolege, nemojte snimati videe po mojim receptima. Hvala 🌷 • Cook berries, sugar and water over medium heat, stirring occasionally for about 10 minutes.Smoosh the berries a bit. • Dissolving gelatin sheets: • Soak 5 gelatin sheets in ice water for 5-10 minutes. • Heat the water and gelatin, stirring over very low heat just until the gelatin dissolves. It shouldn't simmer or boil. • Add dissolved gelatin to berries and stir well to combine. Let it cool. • Place the digestive biscuits into the bowl of a food processor and process until crumbs form. Add melted butter and milk and blend until everything is combined. • Butter the bottom of a springform pan (8 inch - 20 cm). • Press the mixture into the bottom of a springform pan using the back of a spoon. • Refrigerate until you prepare the next layer. • Repeat steps for dissolving 5 gelatin sheets. • Using a mixer, beat the heavy cream. Add cream cheese and mix well. Add vanilla sugar (OR vanilla extract) and mix to combine. • Gradually add powdered sugar. • Add few tbsp of cream cheese mixture into dissolved gelatin. Stir to combine then pour the gelatin mixture into the cream cheese mixture.
