In this video, we explain the concept of the PEG method with the 892 Rancimat. This method is used to determine the antioxidant capacity in samples with a low fat or high water content, such as wine, coffee, tea, or chocolate. • Samples with a low fat or a high water content cannot be determined by the conventional method of oxidative stability determination.
