Butter washing/fat washing is a technique used to incorporate the flavour of whatever type of fat is used, into whatever liquor you are using. You can use fats like butter, a good quality smoked bacon, or an oil (olive, peanut, or sesame). Regardless of what type of fat is used, the technique to incorporate it is pretty well the same. It is an incredible way of building another level of flavour in a cocktail without having to add more acidic, sweet, or bitter elements.
