We double-fry (some say par cook or par fry ) these fries. We use countertop deep fryers in this video, including the T-Fal EZ Clean and Chefman. At a high level, we will hand-cut, soak, and double-fry/par-cook the french fries. • Hand-Cut, Double-Fried French Fries Recipe • 1. Fill a container or bowl with cold water. • 2. Wash, peel, and rinse russet potatoes (5 for 2.25 pounds of fries); place peeled potatoes in the water • 3. Pick a size of fry you like (thick, thin, medium) and cut CONSISTENT- thickness fries. Optional: square off the sides and ends of your potatoes for ultra-consistency. • 4. Place the sliced potatoes in the water. Cover with lid. Place in fridge for thirty minutes up to 24 hours. • 5. Prepare a baking sheet with dry kitchen or paper towels. Drain and rinse the potatoes and lay them on the towels. Use more towels and dry them thoroughly • 6. FIRST FRY: Heat oil in your fryer to 325 degrees F. Peanut, canola, or vegetable oils work well. • 7. Optional: Place your dried potatoes in bowl and add two tablespoons of corn starch (for 2 - 2.5 pounds of potatoes), mix until all potatoes have a light coating. • 8. Fill your fryer basket no more than half-way with potatoes. When oil is at temp., lower the basket into the oil and fry for 5 - 8 minutes, depending on thickness of fry. Fries will be pale and limp. Check them and make sure they do not brown at this point. This cook the interior of the potato. • 9. Remove fries and let them rest ten minute to an hour on a wire rack. • 10. Increase oil temp to 375 F. • 11. SECOND FRY: Re-add the fries to the basket and fry a second time. This will add the color, textrure, and crunch to the exterior of the fry. Remember the interior is already cooked. • 12. Pay close attention and check the fries once per minute. Remove them when they show the color that you prefer. • 13. Drain on a wire rack. Salt immediately. • 14. Devour!
